\n Wasserbüffel-Filet <\/b>
Der unvergleichliche Geschmack des
\n saftigen Fleisches ist ein Muss für jeden Gourmet und mehr als nur eine
\n Alternative zum Rind. Verglichen mit anderen roten Fleischsorten
\n zeichnet sich Büffelfleisch allgemein durch eine leicht aromatischere
\n Note und Zartheit aus.\n <\/p>\n

\n Zubereitungsvorschlag<\/b>
Filet im Kühlschrank auftauen lassen.
\n Mit Salz, Pfeffer und Rosmarin würzen. Die Gewürze schön in das Fleisch
\n massieren. Etwas Olivenöl<\/a><\/b> in eine Pfanne geben. Die Stücke jeweils 2 Minuten von
\n jeder Seite scharf anbraten. Bei Wasserbüffel ist es empfehlenswert
\n zusätzlich beim Anbraten noch Rosmarinzweige in die Pfanne zu legen. Das
\n Fleisch nach dem Anbraten bei ca. 120 Grad Oberhitze und oberste Stufe
\n in den Backofen für ca. 8-10 Minuten je nach Stärke vom Fleisch. Für die
\n Sauce 150 ml Rotwein und 150 ml Balsamico Essig in die benutzte
\n Fleischpfanne geben. Das Ganze stark aufkochen und 4 cl Grappa und 200
\n ml Rahm dazugeben. Aufkochen und reduzieren lassen. Zum Schluss einen
\n guten Schuss Ahornsirup zum Verfeinern dazugeben. Je nach Geschmack wird
\n das Ganze noch mit Salz und Pfeffer abgeschmeckt. Zu diesem vorzüglichen
\n Stück vom Wasserbüffel empfehlen wir Bratkartoffeln<\/a><\/b>
\n mit Rosmarin und Bohnen.\n <\/p>\n
